But that’s not the chicken’s fault. ATK is here with the inspiration you need. It’s time those chicken pieces in your freezer got the respect they deserve. Chicken is the go-anywhere, eat-with-anything, highly transformable crowd favorite that always fills the bill. Find exactly what you’re looking for (and more!) with a wide breadth of themed chapters, including Easy Dinners, Classic Braises, Breaded and Fried, Pasta and Noodles, Savory Pies and Casseroles, and appliance-specific recipes. There’s even a dedicated chapter of recipes for cooking for two. And with an introduction detailing how to prep any chicken part, from pounding breasts and preparing cutlets, to whole bird skills like butterflying or breaking down a chicken, you’ll be a poultry pro in no time.

This cookbook offers straight-forward, easy-to-follow recipes & photos on every page! It is jam packed with recipes you can actually make – no “filler” recipes just to take up space. AND the ingredients are available in the grocery store. AND there are no super fancy techniques to intimidate you. As someone who isn’t terribly confident in the kitchen, this is a cookbook I actually use. This book came with a somewhat hefty price tag, but I am so glad I splurged! I recommend to new or experienced cooks.

The Chicken Bible is much more than just chicken. The vast number of easy to follow, and delicious recipes can be applied to turkey, ducks and geese with easy. This book is worth its weight in gold! America’s Test Kitchen has published another winner.

Excellent collection of recipes. Beautiful colour picture. Complete nutrition guide for each recipe.
Only thing I wish that could have made it better was if the book had been in a binder style. The book is thick & that would make the pages lay flat as you are using the recipe.

This is a great collection of recipes. I’ve made only a handful of them so far, but they turned out perfectly delicious which is really the most important thing. Although not every recipe has a picture, enough do to make the book fun to go through cover-to-cover, and they are gorgeous pictures. There is a ton of variety for every taste, and I was happy to see a good number of turkey recipes. I had been a little concerned about the reviews mentioning small/light print, but my copy is perfectly fine.
Cons:
I wasn’t able to find every recipe I liked on the ATK app, which would’ve been helpful to me (and worth the fairly pricey subscription price) if I would’ve been able to meal plan & create a grocery list with my favorite recipes. But I have to point out that this is only a con because I already have way too many of the recipes in the book bookmarked with post-its for that method to be very workable!
Also, yet another book/video/anything failed to help me butcher a whole chicken. That’s not the con though- the real con is that the already butchered, packaged chicken parts in my grocery store are HUGE – often one boneless, skinless chicken breast half weighs a full pound or more! I am able to get the sizes of chicken parts in this book from whole chickens (with bonus parts for stock-making, of which this book has several recipes/methods for), but what takes a real chef 5 minutes to do takes me a half hour. So, it can be a challenge getting the right sizes (and often the gigantor chicken pieces are tougher). If you, too, can only get appropriately sized chickens by buying whole, have an expert teach you how to take them apart (and have the right tools for doing so). Otherwise, pay close attention to weights and don’t count on the chicken piece weight ranges given in the book will correspond to what you find at your local supermarket. Honestly my supermarket makes me terrified of coming across a monster chicken in the wild.

To start with this book weights a ton, I’m not kidding. I have R/A and I can’t hold it, couldn’t get it out of the Amazon box it came in. It shows you the different parts of the chicken, how to cook them, the best way to cook them and so much more. Photos are good, but print is small. I’m not what you would call a real cook, but I’m sure there will be plenty of recipes I will be able to follow to make some good chicken dinners. Absolutely worth the price. This would make a nice gift for a new bride or anyone that eats chicken a lot.
Very pleased with this purchase.

In the era of google and the internet, I’ve stopped purchasing books with recipes, just doesn’t make much sense any more. But I love this book. It provides practical advise with practical recipes that I find myself going back to again and again. It is very comprehensive, well laid out, and informative. I highly suggest this book to those who enjoy cooking chicken – the whole chicken.

I love the recipes in the Chicken Bible and use them often. I definitely recommend this cookbook to both beginner and experienced cooks. I had a stroke some years ago and am learning to cook all over again. I can attest to the fact that the recipes are delicious.

My husband loved this as I got it for him as a gift but I was bummed to see the corner of the book looked like it had been in the bottom of my Highschool backpack for an entire year.

Rolled the dice on this as a Xmas gift. ? You know you have to actually open a book. I am a former chef Culinary Institute of America Graduate. Class of 12/89 30 years total before I moved on . So I thought they were going to not like it because of how recipes come from your phone. But Master Chef B. Ellmer taught me great cooking is 80% common sense 10% imagination and 20% presentation. Cook Books give you that pause to let your self go out side the box As a former Culinary Institute of America graduate class of 12/89. 30 years in that business. Very hard business. But my school mentor Chef Bruno E. A great chef is taste taste taste , 10% presentation 10% imagination and the rest Common sense. Don’t burn the water. I rolled the dice on every one of these cookbooks but books belong in the kitchen not phone recipes. The pause in reading gives that imagination pause. Every one of the books were a hit as gifts. A talented youngest son ( lefty ) takes after his pops an older boy who is a bio chemist. It’s in him we just have to unleash it . A wife who is a nurse so she follows a recipe down to the period but at least 12 items I would have put in my restaurant menu easily. Youngest lefty open artistic mind Oldest like his mine detailed. But cooking is chemistry and baking (pastry chef and baker BTW) is science so we just need to awaken the chemist and let his fremen carry him over the DUNE. Lidia is awesome. A self taught chef who was man over children and Italian immigrant mom both taught me just as much as the C I A did . Only downer lower the price. I rolled the dice on the Christmas gift wasn’t sure how this digital kids would accept but every book was a hit. 2 sons a daughter in law. And my wife close to 30 books purchased. With book shelves book holders the newbie equipment. And they were absolutely thrilled a home run Xmas gift . The books are beautiful condition impeccable even a few used ones . But this is the digital age a little lower on the price.
This jeeps our family connected. Cook books belong in a kitchen as much as a chef’s knife or an immersion blender. so 4 stars but really 4.5 the picture is just my wife’s books of a few for me too
