This is a quality meal that is filling, is easy to make, a good size, and with a very good flavor it is a good value.

Delicious, and good ingredients, especially if you are eating clean. Its even gluten free, and easy to throw together with a burrito or simple bowl of corn chips. It can be a whole meal by itself or even add some fresh veggies and corn chips for a short cut to a plate of nachos!

Been trying different frozen meals, two at a time so I can compare them, and though this one is good, it lost out to Amy’s poblano enchiladas. This one is tasty and satisfying, but just not as much as the poblano enchiladas, plus this has some chewy bites inside, which I presume are cheese?, but I didn’t think they contributed that much flavor. Nice texture, though. I want to simplify my choices, so eventhough this casserole is not bad at all, I will still take it off my list and keep ordering the poblano enchiladas while trying other frozen organic Mexican dishes. I would still recommend this, though, because it’s still good and it’s also healthy.

So As we know, the original history of Spanish-to-Caribbean-to-Mexican-to-southAmerican-type medleys is from the origins in the undernourished pot-luck style meals that slaves were fed in the infamous Americas slave trade era (so not the ancient times Hebrew/JewishMuslimArab slaves from Ancient Africa that migrated to Israel and Palestine from the olde Bible lore, but the circumstances were similarly poor. And like most people I am not so crazy about traditionally as described-heavily spiced foods, as it overwhelms the actual flavor of the food being served, but I was asked to give an opinion/review, so here we are with that…
My first thought is on the ease of preparation(it’s fully microwaveable), so that was very convenient, andin tasting, I do feel that the Amy’s Mexican Casserole dish gives you an elevated NorthAmerican take on what is essentially in today’s menu historie, a typical (NOegg)-real-vegetarian-flexibleBurrito-bowl.
Some people might prefer to add additional salts, but, I simply added homemade toasted (garlic) bread made from the deliciousness that is *SaraLee Artisano (white) Bread* with added garlic salt, and it was more than sufficient for this interesting meal appetizer.
Although there is obviously room for improvement, as I have yet to taste an seriously A-minus-to-A+plus- anything frozen food-type-option, but I think the majority of foodie manufacturers are giving it there best both nutritionally (with more traditional vegan to(NOegg)Vegetarian options) and tastewise/quality of actual flavor of food when fully prepared.
Overall, Although I still prefer the Amy’s Organic food line, I think Amy’s has found their grocery marketplace niche with the elevated international foods themed meals, particularly with the Chinese style noodles, including PadThai(although you will need to make your own tofu strips-). But, and although as I explained I typically avoid specifically Caribbean based type Spanish-to-Mexican-style foods for (general vegan-to-strict-(NOegg)vegetarian-preferences based) nutritional reasons, I still found the Amy’s general menu including their Amy’s Mexican Casserole to be quite a pleasant surprise.
But the SaraLee Artisano Bread(toasted and sliced to halves or fours) really helped to round out the meal and brought it home with completion of flavors for the palate.
So, If it’s (Homemade Garlic-Bread Night) for themed foods prep at home, it might be worth a try.
Grade Solid C (or Not Bad) /S’ok! Or 3.125Stars!

Amy’s brand is great food for a single person cooking for one, lots of verity and meals that are different from the every day options

Amy’s is my go to for entrees. A great value plus Delicious varieties and microwaveable. No cleanup needed. I don’t have to cook. My favorite is the Kale and Parmesean Cheese with rice pasta. The parmesean cheese sause is Amazing.
