    This is a really good product. I can’t give it 5 stars because to earn that in the low carb/keto category you gotta make a product I can’t distinguish from the full carb version. This is probably the product I’ve tried that comes closest.

    I’ve had many of the no carb, and SUPER low carb versions of pasta and they all come out like rubber. I’ve made my own with resistant wheats (haven’t tried resistant tapioca yet cause I can’t find it). All of that was pretty good. I’ve tried shiratake, pea protein, and lupin flour, and that’s all gross to me. I think these guys really figured out the truth: you gotta put some semolina in it if you want to get the texture close to the real thing. Anybody of you crazy enough to try to make keto pasta using mainly fibersol-2? Well I was. Don’t try it!

    It takes a long time to cook. I don’t time it; I just let it go till it’s done. I’m pretty sure you could boil it forever and the texture would never change. It goes from being dry to being a little too al dente when it’s done. And like I said, the texture is close but it is distinguishable from the texture of true semolina pasta. The flavor is great but it does have a slight bit of that distinct flavor that comes with all resistant starches.

    And it’s quite low glycemic. I don’t have my exact numbers but maybe I’ll get the before and after values the next time I cook some up. I generally try to have a 6:1 carb:fiber ratio (which is steel cut oats) or better diet. As the ratio goes below 6 the food gets healthier. As the ratio goes above 6 it gets less healthy. Carbe Diem has a ratio of 40:24. I bet you’d have difficulty finding a salad with a 1.67:1 ratio! If you want a 1:1 ratio, go outside and gnaw on a tree trunk. Don’t really.

    I love this stuff! More expensive, cooks longer but well worth both! The taste is exactly like regular pasta, but lower cal and carbs. Not quite keto but close. (I did cook a few min longer than directions said to get better texture).

    My low carb (not keto) diet (lost 35 lbs and got my A1C from 10 to 5.5) often means “making do” with alternatives that aren’t really anywhere close to “the real thing” (“Miracle” Noodles are not miraculous, and zoodles just don’t scratch that “pasta” itch for me).

    Carbe Diem!, however, feels like eating regular pasta, with a much lower carb count, plenty of protein and a goodly amount of fiber to boot! It looks and tastes like you’re having a cheat day while still doing your body a solid. It does take a bit longer to cook than regular pasta (13 – 15 minutes), but that’s not a problem for me. And my housemate, who loves his carbs, was both surprised and delighted by this, calling it “surprisingly delicious” and “all but indistinguishable from regular high carb pasta.”

    I will happily be ordering this product again.

    What a great way to add fiber and taste to a low carb diet. I believe this product is a “must have” in a low carb plan. I have subscribed to a regular delivery of an assortment of these products. Even my Italian husband likes them.

    This pasta was recommended to me by a family member because my fiancé is a diabetic. He was so excited to be able to eat pasta again! It was easy to cook up, you boil it just like any other pasta, except you have to boil it longer, approximately 14 to 18 minutes depending how tender you like it cooked. I believe the longer cooking time is probably because of the protein content. It tasted, smelled and looked just like regular pasta!
    The pasta has a high fiber content, 0 sugar and 8 grams of protein per serving!
    What a great substitution for regular pasta!

    Carbe Diem low-carb pasta has honestly changed pasta for me. The fettuccine is my absolute favorite. I was never even a big fettuccine fan before, but this one has such a light, fluffy texture compared to regular boxed pasta. It actually reminds me of the refrigerated pasta you buy fresh at the store. Not quite like handmade restaurant pasta, but very close to that fresh refrigerated style. It is noticeably lighter than traditional boxed pasta, and once I started eating Carbe Diem, it became very hard to go back to regular pasta.

    I mostly live a keto lifestyle, so this allows me to enjoy pasta without the guilt. My only wish is that the expiration dates were a little farther out. Since I do not eat large portions at a time, I like to keep some on hand, and longer dates would be helpful.

    For anyone who has texture concerns, here is what worked for me. Do not cook it as long as the box says. I believe the time listed was around 17 minutes, but I start testing it around 10 minutes. For me, 10-11 minutes at a full boil is perfect. If you cook it the full time, it can get way too soft. Just test it early and adjust. It cooks faster than you think. And trust me i do not like al-dente pasta i like it fully cooked soft and not mushy!

    After draining, I lightly toss it with a little butter or olive oil. I prefer butter because it adds flavor while keeping the noodles separated. They actually do not stick much, but a little fat helps.

    The biggest tip I can give is about sauces and casseroles. This pasta is best when you prepare only what you plan to eat right away. If you mix the entire batch with sauce and let it sit for a long time, especially in casseroles or mac and cheese, the texture can start to change. It does not hold sauce the same way traditional pasta does over long periods. When sauce sits on it too long, it can break down and sort of disintegrate or get just plain wonky.

    Now I simply butter the plain pasta after cooking, store it separately, and only mix a portion with sauce when I am ready to eat. It comes out perfect every time. If you want to make baked dishes, I recommend making smaller portions that will be eaten the same day.

    Also, my kids, who I assure you are just as picky as yours, did not even notice the swap. I will not say they raved about it, but they did not question it at all, and that is a huge win in my house.

    Overall, this pasta is phenomenal. It tastes great, feels lighter, and truly satisfies a pasta craving without the carb overload. I actually prefer it to regular boxed pasta now. If you cook it properly and use it thoughtfully, it is a fantastic low-carb option.

    Many of the reviews complain that this isn’t a low carb pasta. The pasta is marketed as “lower NET carbs” not low carb. The manufacturer isn’t lying. Some consumers are just misunderstanding. NET carbs are calculated by deducting the stated amount of fiber from the stated amount of carbohydrates. This pasta is absolutely a lower NET carb pasta because there are 24 grams of fiber in every serving and after you subtract that from the 40 grams of carbohydrates you are left with 16 grams of NET carbs. That is a huge difference when comparing it to regular pasta.

    I have been buying Fiber Gourmet high fiber/lower net carb pasta for years and after a recent recipe change it’s not to my liking anymore, so I decided to try the Carbe Diem penne and rotini. This is way less expensive and so much better. I cannot believe how good it is. The penne was cooked perfectly in 14 minutes and the rotini in 13. It wasn’t broken in the package or hard and chewy after cooking. It tastes just like any regular dry pasta would taste. It is so delicious and I’m so glad I tried it. I am now a fan for life.

    Updated 6-10-24 – I just bought the elbows and they are also delicious. They cooked in 13 minutes. They are much bigger than standard Elbows. I attached a picture of before and after they were cooked for reference. I love the size. They are perfect in my garbanzo bean and lentil stew. They also have lines and they really hold onto the sauce.

    8/9/24 – Updated to add an image of the spaghetti. It’s great just like all the others, and it cooked perfectly in 16 minutes. This brand cannot be beat for low NET carb, high fiber pasta. It’s the best!

    8/25/25 – Updated to say I now use my Instant-pot pressure cooker to cook all these different pastas. As an example (you can find cooking instructions online for every type of pasta), for a full box of penne, I add 24 ounces (3 cups) of water with a splash of olive oil and a dash of salt. I cook on high pressure for four minutes, let it naturally release for two minutes then quick release. It’s cooked perfectly without boiling a big pan of water. It’s so much faster and a great option if you have a pressure cooker.

    I was skeptical about buying this pasta because all of the low carb pasta I tried before just didn’t workout. This pasta is actually low net-carb pasta which is what made me wanted to try it for the fiber content. Most other pasta tasted like cardboard and was too expensive. So I saw this pasta and it had few ingredients. So I did my research on semolina wheat and durum wheat which is practically the same thing. Semolina has more dietary fiber than white flour. Higher fiber content can aid in digestion, promote a feeling of fullness, and help regulate blood sugar levels. So I decided I will buy a box. I made a pasta salad. I was FLOORED! I was like “WHAT! WHAT!” this can’t be real! THIS TASTES LIKE THE REAL THING! So, I decide to try it out on my husband who doesn’t like anything, and is very, very, very picky. Soo, I made his favorite macaroni cheese using this pasta. I did not tell him anything, because I knew he would not even try it. Well, he ate it and went back for more. He looked at me and he said, “I see you finally decided to stop using “fate” pasta. This is delicious.” I gave him a hug and said “I will be making your favorite pasta dishes for now on using real pasta. I am throwing away all of the fate pasta.”
    I always let my pasta cook about 17-18 minutes just because I like that consistency. You really don’t have to, and you don’t have to when using this pasta in the oven. I do 15 minutes on the stove when making baked pasta dishes. It always comes out good. I dont know if it’s all in my mind, but I am losing weight eating this pasta, my blood sugar levels do not rise. The scales proves it. I have made all my pasta dishes with this pasta. I have purchased from Card Diem site when they have a sell, and I have purchased from Amazon. I am trying the Orzo pasta next. I purchased that from Carb Diem. I didn’t find it on Amazon. This is a winner people. Buy one box and try it. Oh, btw. I found it at my local Publix doing their BOGO sale! I nearly fainted! There wasn’t much left. So I bought four boxes of my favorite Rotini Pasta.

    These noodles are so good they taste like regular noodles from the grocery store to me. And it’s half the calories! Um yes please. Also it has a little protein. Which is really nice. These noodles are so worth it. Preparation is like regular noodles. Will definitely purchase again!
