As a busy family we are always on the go and I have spent a lot of time in the past searching for quick recipes that taste good and are different than our everyday to spice up our meals. I have had used a pressure cooker in the past but never thought of it as a kitchen staple until reading this book. I borrowed my moms pressure cooker just to try out the recipes and see if we liked them. Needless to say a new wishlist item for me is a pressure cooker for my house.
The Pressure Cooker Cookbook is full of healthy and tasty recipes that you can make at home in one hour or less. Most of the recipes were 20 minutes or less so you will always have a quick meal go to that is not frozen. The recipes are easy to follow with detailed instructions on how to prepare it and they make it easy to swap out ingrediants you may not like if need be. Some of the recipes have very high quality photos to check out to make sure you are doing it right. If you are an on the go person then this is a great cookbook for you, even if you don’t have a lot of experience in the kitchen.

It looks like there are some good recipes in this cookbook, but some of the ones I read look like they have missing steps. For example, in “Pork Ragu” the instructions say to brown half the pork and remove to a plate and “You can brown the remaining pork for more intense flavor, but it’s not necessary if you want to save time”. Then you put Italian sausage and other ingredients in the cooker, cook, and serve over polenta or pasta. Hey… what happened to the pork? According to the instructions it’s still sitting on the plate.
Similarly, in “Pork Tenderloin with Rice Pilaf”, you cook the pork and remove it to a plate or rack. Then you add other ingredients and cook. When you open the pressure cooker you quickly remove the pork to a plate or rack. But wait… it’s still on the plate or rack! The instructions never said to put it into the cooker again.
I hope at some point the author reviews these recipes and updates this book to make sure all the recipes have complete instructions.

I recently bought myself a Pressure Canner for canning my garden veggies and fruits but it never occurred to me that I could use the pressure canner to create yummy quick meals for my family. Of course with this being my first time using a Pressure Canner I have no idea even where to start. The book, The Healthy Pressure Cooker Cookbook: Nourishing Meals Made Fast, goes over not just healthy recipes but it goes over how to use a Pressure Canner. That itself makes this book very handy to me. It doesn’t just jump into the recipes. The book also goes over the advantages and disadvantages to using a Pressure Cooker. There’s clean instructions about the Do’s & Dont’s when using a Pressure Cooker. There are several tips in this section that I would never even have though of.
The recipes in the book are grouped by the main ingredient in the recipes with the exception of the last 2 Chapters. But they are also labeled with Dietary Tags such as, Gluten free, Paleo, One Pot, Vegan, etc. The Recipes have an “At a Glance” section that tell you the pressure level, time under pressure, and the method of release. Most recipes in the book serve 2 people but there are a few that serve 4 or more. The instruction for the recipes are clear and easy to follow. The ingredients list is clearly measured. It also tells you the Nutritional Facts for each recipe. Each recipe has detailed info for either Stove Top or Electric Cookers. There are also Tips for most recipes. I like the variety of the recipes. They would easily impress my family or any guests that I have over. The soup recipes are my favorite.
The end of the book offers a quick guide to Pressure Cooking Time in chart form. It lets you know the Pressure Cooking Time for items such as Meats, Poultry, Fish & Seafood, Beans & Legumes, Grains, and Vegetables. There’s also a handy Measurement Conversion Chart in the back.
Overall, the book is a nice addition to my Pressure Cooker. It’s a great resource with lots of information. The quality and variety of the recipes is top notch.

Although I do not currently own a pressure cooker, after reading this book it’s a possibility I might purchase one. Although I love to cook, I was always afraid of pressure cooking, those stories of lids blowing off just frightened me. But after reading this book and the variety of recipes, pressure cooking doesn’t seem so scary.
The recipes are well written and easy to follow. There is a recipe for everyone and many different cuisines. I prefer Italian food, there are many recipes that can cut cooking time probably in half. The artichoke recipe is one I would definitely try.
Breakfast, lunch, dinner and even dessert this book covers it all. The only thing I would like to have seen was more pictures. I personally like to see what the finished product is supposed to look like.
